Cure Your Cocktail Blues with the Penicillin: A Smoky and Sweet Sip

Feeling under the weather? Don't reach for the medicine cabinet – whip up a Penicillin cocktail instead! This unique and flavorful drink combines the smokiness of Scotch with the soothing sweetness of honey and ginger, offering a complex and satisfying experience.


2 ounces blended Scotch whisky (a blend is preferred for a smoother taste)

¾ ounce honey-ginger syrup (recipe below)

¾ ounce fresh lemon juice

¼ ounce Islay single malt Scotch whisky (for a smoky finish)

Candied ginger or lemon peel, for garnish (optional)

Ardbeg 10 Year Islay, 750 ML

For the Honey-Ginger Syrup

½ cup honey

½ cup water

3-inch piece of ginger root, peeled and thinly sliced


Make the Honey-Ginger Syrup (Optional): In a small saucepan, combine honey, water, and ginger slices. Heat over medium heat, stirring occasionally, until the honey dissolves and the mixture simmers. Remove from heat and let steep for at least 30 minutes, allowing the flavors to infuse. Strain the syrup into a jar or container and refrigerate for up to 2 weeks.

Chill Your Glass: Fill a rocks glass with ice and let it sit for a few minutes. Discard the ice before building your drink.

Combine and Shake: In a cocktail shaker filled with ice, combine the blended Scotch whisky, honey-ginger syrup (if using), and lemon juice. Shake vigorously for 15-20 seconds to chill and dilute the drink.

Strain and Layer: Strain the contents of the shaker into the chilled rocks glass filled with fresh ice. Gently pour the Islay single malt Scotch over the back of a spoon to create a separate layer on top.

Garnish (Optional): Add a piece of candied ginger or a lemon peel twist for a touch of visual appeal.


Honey-Ginger Syrup Substitute: If you don't have time to make the honey-ginger syrup, you can substitute ¾ ounce of good quality ginger liqueur and ½ ounce of honey.

Scotch Selection: Use a blended Scotch whisky for the base, as it provides a smoother and more approachable flavor profile. For the Islay single malt layer, choose a peaty variety known for its smoky characteristics, such as Laphroaig or Ardbeg.

Adjust the Sweetness: If you prefer a sweeter drink, add a little more honey-ginger syrup or simple syrup to taste.

Fresh is Best: Use fresh lemon juice for the brightest and most flavorful results.
