Ibi Black 720ml (射美 BLACK) is a compelling and innovative sake from Sugihara Shuzō (杉原酒造) in Gifu Prefecture, made from "Ibi‐no‐Homare" rice with an unusually low polishing ratio of 80%, preserving a rich grain character. This unfiltered, undiluted raw sake is aged in charred oak barrels for about a year, imparting a complex smoky and peaty profile reminiscent of fine whisky.
