On the nose: Dehydrated strawberries and raspberries, dried cereal grains, a hint of powdered sugar. On the palate: Grilled steak drizzled with puréed raspberry, shiitake mushrooms and a tangy sulfuric spice note on the end, curtesy of the fresh Oloroso sherry barrel aging. An umami bomb! This is one for the geeks!
